Our counter sits at the far south end of Macleod Trail — roughly 45 km from most of Airdrie, each way, before you account for Deerfoot at five o’clock. So we bring the bakery north instead, on a schedule you can plan around.

Why this is actually bread

Most low-carb bread is a workaround. Ours is a bakery product that happens to be low-carb, and the difference shows up the moment you put it in a toaster.

No cauliflower

Cauliflower crusts and loaves are vegetables pretending to be dough. They go soggy, they steam instead of browning, and they taste like what they are.

No fathead dough

Melted mozzarella and cream cheese makes a chewy disc, not a crumb. It cannot be sliced, it cannot hold a sandwich, and it goes hard in the fridge.

A real crumb

Ours is built on an almond dough that proves and bakes like white bread. Open crumb, it browns, it toasts, and it holds butter without collapsing.

A live sourdough culture

The sourdough loaf and the bagels are fermented with an actual starter. That is where the tang and the chew come from — not from added vinegar or flavouring.

No sugar alcohols in the sauces

Our caramel and strawberry sauces use monk fruit extract and fibre. No maltitol, no erythritol, so no cooling aftertaste.

Made in our own kitchen

The bakery items are produced in our commercial kitchen on Macleod Trail in Calgary and driven up to Airdrie on the day of your run.

Questions

How fresh is the bread when I get it?
It is baked in our Calgary kitchen and driven to Airdrie on the same day as your pickup or delivery window. It has not been frozen, thawed, or sat in a warehouse. Loaves keep several days on the counter and freeze well.
Is your bread gluten-free?
No. Our products are low-carb and keto, not certified gluten-free, and some contain wheat protein. If you have celiac disease or a diagnosed gluten intolerance, these are not the right products for you. If you are avoiding carbohydrate rather than gluten, they are exactly right. Check the ingredient panel on any individual product before ordering.
What is in it, if not flour?
The core of the white bread is an almond-based dough. The sourdough is fermented with a live culture. Sweetened products use monk fruit extract and dietary fibres rather than sugar or sugar alcohols. Full ingredient lists sit on each product page and on our nutrition facts pages.
How do the frozen and ice cream items travel?
In a cooler bag on the run. Move them to your freezer as soon as they arrive. If you will not be home, pick the Airdrie pickup window instead rather than risking a doorstep drop.
How much notice do you need?
Twenty-four hours on every order, without exception. Everything on this page is baked or packed for a specific run rather than pulled off a shelf, so we need a day to get it ready. Order on Monday and it can go out on Tuesday’s run; order Tuesday afternoon and it goes to Wednesday.
Do you deliver outside Airdrie?

Why is it more expensive than supermarket bread?
Almond flour costs several times what wheat flour costs, the doughs take longer to work, and we bake in small batches rather than on an industrial line. It is a fair question and that is the honest answer.
Do you do custom or bulk orders for Airdrie?
