As there are many many dietary considerations, restrictions, allergies and preferences in the modern world, we felt it necessary to focus on only one, to the exclusion of all others. Keto (Low carb) delicious bakery products and fast food. Therefore all our products must fulfill 2 specific objectives:
1. Be absolutely delicious and mouthwateringly satisfying.
2. Be truly and legitimately low in net carbohydrates.
Our recipes are so low in net carbohydrates that you can stuff your face and maintain a carb count that can keep you in a state of ketosis. The metric we seek to guide our recipes is blood glucose response, so you could say all our recipes are built with the goal of having very limited blood glucose response, if even any response at all.
All our sweeteners (primarily erythritol) register zero on the blood glycemic index. We do not use so called resistant starch or modified starch, as study after study clearly shows large blood glucose rise after ingestion of modified/resistant starch. Our dough ingredients are primarily almond flour with some wheat protein, spices and gums for structure.
As such, the Keto Grill & Bakery is NOT, nor will it ever be anything listed below:
Gluten Free, allergy free, peanut free, nut free, low fat, vegan, vegetarian, paleo, carnivore, “health food”, anti-oxidant, Non-GMO, Kosher, Halal, multi grain, artisanal, beyond meat, organic, grain fed, etc, etc etc..
We understand that some or all of the dietary restrictions listed above have their place and may indeed be truly good options for many people for a huge variety of reasons, but we believe the marketplace has already a plethora of these options. Our focus is singular. Super low carb, delicious food.
We started Keto Grill & Bakery to answer a need many in the keto Calgary community have had for years. Truly keto bread, with lower than two net carbs per serving that, is delicious, chews and toasts beautifully, and is a true replacement for the real thing.
We approach baking with an emphasis on taste and texture without compromising low-carb content.

As such, I figured I was in the best position to try and solve this problem. My recipes use Almond Flour as our dominant ingredient. The rest are my secrets.
